2 1/2 cups chopped tomatoes
3/4 cup chopped bell peppers
1 clove garlic minced
1/2 cup olive oil
3 teaspoons fresh oregano
1 Tablespoon chopped fresh basil
salt to taste
In a bowl, mix all the ingredients and let stand for at least 10 minutes. Serve over toasted slices of crusty bread (Bruschetta), or over pasta.
