Pumpkin Chocolate Chip Muffins

Adapted from Feeding the Whole Family by Cynthia Lair


2 eggs

½ cup oil

½ cup sugar

1 cup pumpkin purée

1 ½ cup flour

½ t baking powder

½ t baking soda

1 t salt

3 t cinnamon

1 ½ t ginger

¼ t cloves
½ cup chocolate chips

Combine eggs, oil, sugar, and pumpkin puree in a bowl. In a separate bowl, combine remaining ingredients, but not yet the chocolate chips.  Combine the two bowls, stir briefly and then fold in the chocolate chips.

Bake in muffin tins for 20-25 minutes at 350°
